For my kid who won't eat enough veggies, I made--

Broccoli Cheddar Nuggets
From the Wholesome Baby Foods Website:

Ingredients:

1 16-oz Package frozen broccoli, cooked, drained, and chopped

1 cup Seasoned bread crumbs (you could try using baby cereal if you want, we know it works well with "baby meatballs")

1 ½ cups Shredded cheddar cheese (please use real cheese and not a "processed cheese food" product. Try tomato & basil cheddar!)

3 Large eggs or 5 egg yolks - Most pediatricians say it's ok to use whole egg in a baked good when baby is over 8-9 months old without allergies. We would recommend that you substitute 5 egg yolks for the whole eggs if serving this to those under 1 yr. Ask YOUR pediatrician!

Directions:

Preheat oven to 375
1. Lightly coat a baking sheet with olive oil and set aside.
2. Combine all remaining ingredients and mix well.

*Add seasonings if you like - garlic powder, pepper, extra basil & oregano for example. Add a fruit or veggie puree to substitute for the eggs if desired.

3. Shape mixture into nuggets or fun shapes such as squares or squigglies etc..and place on baking tray. Bake for 20 to 25 minutes, turn nuggets over after 15 minutes. Serve warm. Be sure to crumble these if your baby needs!

Suitable for those who have had the ingredients and for those who can handle texture and mash foods with their gums. Great for Moms & Dad too!

  2. I can't believe how much bigger he looks now that we can see his teeth. He IS growing up! Kudos to Joe for having the motivation to cleaning out the closet...on his own! YAY! Love your Monday!

  4. OMG, he is your spitting image in #2. Seriously. AND, I have that same outfit for Max in 18-24 months -- I can't WAIT until he can wear it.

    Now that is a BIG deal! I think I would pass out if my hubs decided to clean out his closet on his own accord! And I can't believe what a little man Noah is becoming! Happy Monday!

  8. Okay, so you DO realize, of course, that down the road, when Noah encounters a small pile of dog vomit, he may think it's a broccoli cheddar nugget. I thought the zucchini/carrot/whatever muffins sounded really really delish, but the nuggets, to me, sound iffy. Maybe it's just my complete love/hate relationship with broccoli- I hate it, but my wife loves to make me eat it anyway.

    Oh well- love the pics of Noah. And congrats to Joe for doing one of the few things guaranteed to make a wife smile- cleaning up.

  10. Recipe looks yummy, and I want to get me one of those hubbies! I never thought about actually sitting on my child for a picture. Makes me pause for thought.

    Thank you for posting the Broccoli Cheddar Nuggets. It seems easy to make, not too many ingredients and an easy way to get veggies in a toddler. I'm trying it out next week!
